Santaka is a popular Japanese heirloom pepper with bold heat and excellent flavor. The thin-walled peppers grow 2½"–3" long, beginning green and ripening to red. Rated at 40,000–50,000 Scoville heat units, they can be enjoyed fresh in stir-fries and soups or dried for later use. The frost-sensitive plants grow more than 24" tall, perform well in containers, and mature approximately 70–80 days after transplanting in full sun.
